Does anyone know how difficult it may be getting to any areas in the Mustang region in early January? Where does the restricted area begin and would there be a good short trek into the unrestricted area that is possible at this time of year, or is it better to just fly inot Jomsom and walk to Pokhara at this time of year?

Jason, the upper mustang starts north of Kagbeni and is a restricted area and you only get a permit with an organised tour by a nepal based travel agency and a liason officer. This is pretty expensive, if I remember well, the basis fee is allready 700 US $ per person + expenses for your group + 150 US$ per day for the liason officer.
I mean this is not just a little sidetrek, is it?
When you prefer trekking on your own and maybe a little bit cheaper you could fly to jomson, visit the tibetan-styled villages of Kagbeni, Jharkot, Muktinath and Dzong. If you take some days for this, it will be very interesting.
But be prepared for the very, very cold and have a warm downjacket, Then you could go down heading for Ghasa, the first frostfree place with lovely smells and then to Tatopani. You will need a least 1 whole day in the hot springs to get the cold out of your bones.
If you have still time you could continue to gorepani or even to ABC, somtimes it is open in January, other years its completely closed.
neede time: Jomson by flight-Muktinath and villages-Tatopani-Beni-Pokhara: 8 to 12 days, I recomend 12 days
Tatopani- Gorepani-Pokhara: + 2 days
Tatopani- Gorepani- Gandung-Pokhara +4 days
Tatopani- Gorpani-ABC-Pokhara + 8 Days
Averags cost per day:13-20 $
