Seven days is indeed too short for the Jomsom Trek, unless you fly into Jomsom and start walking down towards Tatopani and Beni stright away. This may be an option, although going to Jomsom and not seeing Muktinath and Kagbeni would be a pity, I am told by Master Andrees. Maybe he can add or correct this info.
You could go Birethanty to ABC/Annapurna Sanctuary in 7 days. I have done it last year with my 11 year old son. It would be better if you allocate 8 days, but you could do it in 7. Another option is to fly in/out of Lukla and do 7 days in Khumbu. Sure, in this time you will not reach EBC or Gokyo lakes ( I mean you can perhaps reach them but not get to return in 7 days!!). However you could still have a lovely time visiting some very interesting places like Namche Bazaar, Tengpoche Monastery, Kumjung, Portse etc. An iteresting side-trip from Namche is Thami (birth place of Tenzing Norgay who conquered Everest with Edmund Hillary for the first time in 1953). In fact this trip would be excellent for aclimatizing. I guess spending at least 2 nights in Namche is crucial in the Khumbu area.
For the Annapurna area you need to get the ACAP permit (KTD or Pokhara). I am not sure what the current rule is for the Sagarmatha National Park (Everest trek) as I was there 2 year ago, when you needed to get a permit in KTD. Your hotel in KTD should be able to advise you on this, as well as get these permits for you.

hi Jess, as Daniel mentioned already, 7 days is a pretty short time. You would love every extra day in this beautiful scenery a with the beautiful people living there. You could fly into jomson in the mornig an go to kagbeni the same day. Kagbeni is one of the nicest villages and has a very tibetan flair. With 7 days you have to skip Muktinath, a pitty. But anyway, the jomosom trek is one of the best and you will go thorough the villages of Marpha, Tukuche, Larjung..... all marvels on the way. If you are very fast, you can still enjoy some hours in the hotsprings of Tatopani.
Be sure not to take the shortcut thorough the riverbed in Tukuche or larjung. It saves you just half an hour, but You miss beautiful villages an you have to fight dust-storms in your face. Dont be afraid of altitude, this would only be a problem if you are running straight from jomosom to muktinath the first day, wich would not very wise.
Another nice trecking tour would be to climb up from birethanti to Gorepani with great views from Poonhill, then to Gandruk with it marvelous old village (have a look at the messages from nick on this board, he has a lodge with beautiful view there) and back
to Pokhara.
In November it can be bloody cold in the jomsom area, its very cosy to have a good downjacket, wich you can rent for half a $ a day in pokhara or kathmandu. You can see some pictures of thes villages in my site www.nepal-dia.de.
