From what I hear you can indeed rent good mountainbikes in Nepal, but I have not done this myself. Some other Nepal web sites, and various agencies might have this info. I have seen advertising in Thamel at various hotels about renting good bikes, as well as mountinbike tours.
Regarding a 5-8 day trek, well, it depends whether it will be 5 or 8. In eight days you might be able to trek from Naya Pull to Annapurna Base Camp and back - a very nice trek indeed. However I would not advise to do this in less than 8 days, as you will greatly risk both altidude sickness and plain exhaustion. For 5 days you migh do a short trek from Lukla to Namche Bazaar and the Tengpoche Monastery in Khumbu (Everest) area, or perhaps a short round trip in the Annapurnas involving Ghandruk and Poon Hill.
